Hi Tony I'm no expert on finishes,but I made some solid ash tables for home and because didn't want to darken them I used a water based varnish (from B&Q) and gave them about 3 coats lightly rubbing down between coats....very pleased with the finish and its easy to sort if they get marked..hope this helps...?
